Tomato Pulao is a scrumptious main dish that is a widely-eaten delicacy of South India. It can be eaten for Brunch, Lunch, Dinner and is made in literally every South Indian household.
To make this filling and rich pulao, you just need a handful of common kitchen ingredients. South Indian recipes are incomplete without their signature tadka.
A common South Indian tadka includes mustard seeds, curry leaves and chana dal.
This tadka not only adds to the taste but also infuses a special aroma into the dish.
To make this Tomato Pulao dish, we have added a handful of peanuts and cashews, which will further add to the richness of the recipe.
In this recipe, we will cook the rice separately by boiling them in double the amount of water. Make sure you always cook rice in double the quantity of water to make fluffy yet soft rice.
Another cooking tip you must keep in mind is to use onions and tomatoes in 1:2 while preparing the onion-tomato masala. For example- If using 2 onions, use 4 tomatoes.
Don't forget to garnish the dish in the end with freshly chopped coriander leaves to elevate the flavours further.
INGREDIENTS OF TOMATO PULAO

4 cup basmati rice
3 onion
3 tomato
1 tablespoon mustard seeds
1 teaspoon chana dal
2 tablespoon chopped ginger
1/4 cup raw peanuts
14 cup cashews
1/2 teaspoon asafoetida
3 stalks curry leaves
1 teaspoon red chilli powder
1/3 teaspoon turmeric
2 tablespoon ghee
4 tablespoon refined oil
salt as required
4 tablespoon chopped coriander leaves
HOW TO MAKE TOMATO PULAO
Step 1 / 6 Boil The Rice
Take rice in a big bowl. Wash it properly 3-4 times and then wash once under running water. Now add 8 cups of water to a pot and bring it to a boil. Add rice to the pot and cook until all the water has been absorbed and evaporated.
Step 2 / 6 Saute The Tadka Ingredients
Heat refined oil in a pan. Add mustard seeds, chana dal and chopped ginger. Saute them for a minute. Now add peanuts and stir till it gets cooked. Now add cashew nut, curry leaves and asafoetida. Mix all the ingredients well.
Step 3 / 6 Saute Onions And Tomatoes
Now add chopped onions, stir and saute till golden brown in colour. Now add chopped tomatoes along with salt as per taste. Cook the tomatoes for 6-8 minutes or until mushy.
Step 4 / 6 Add Spices
Now add kashmiri red chilli powder, turmeric powder and cook for a minute. Lastly, add desi ghee to give the masala a nice fragrance and taste.
Step 5 / 6 Final Mixing
Now add boiled rice to the tomato masala along with finely chopped coriander leaves. Mix well, cook for last one minute and switch off the flame.
