1 large sweet potato
1/4 cup chopped broccoli
1/4 cup chopped beetroot
1/4 cup chopped carrot
2 tablespoon lemon juice
1/2 teaspoon chaat masala powder
salt as required
1 teaspoon virgin olive oil
HOW TO MAKE SWEET POTATO SALAD
Step 1 / 3 Boil The Sweet Potato
Boil the sweet potato either in a pressure cooker or in a microwave. Once done, peel it and chop it into bite-sized pieces.
Step 2 / 3 Saute The Veggies
Heat olive oil in a pan. Now add the chopped broccoli, carrot, beetroot and sweet potato. Lightly saute the veggies for just a few minutes. Make sure that you don't saute for too long as the veggies need to be crunchy.
Step 3 / 3 Season And Serve
Add the veggies to a bowl. Now add lemon juice, chaat masala and salt. Give a nice mix and serve. Enjoy!
