Ingredients of Rose Kheer Tart

1 cup wheat flour

100 gm butter

1/4 cup basmati rice

2 teaspoon powdered green cardamom

1 pinch baking powder

How to make Rose Kheer Tart

Step 1 Wash the rice

For making this dessert recipe, firstly, wash the rice with water. In a grinder, add the washed rice and grind it to make a smooth paste of the rice. You can add 2 tablespoons of milk to make the paste smooth.

Step 2 Boil milk and heat it over low flame

Place a pan over low flame and heat 5 cup milk in it. Stir continuously and make sure that milk gets reduced in volume over the low flame.

Step 3 Add rice paste

Now, add the rice paste to the hot milk and stir continuously to avoid any lumps. Cook it on low flame for 15 to 20 minutes.

Step 4 Add sugar and cardamom

Next, add the sugar, green cardamom powder and the rose syrup in this. You can adjust the quantity of sugar according to your taste. Give it a stir to mix all the ingredients well. By now, the milk must have reduced and thickened.

Step 5 Give it a final stir and refrigerate

Give it a final stir and take the kheer off the flame. Transfer it to a bowl and place the bowl in the fridge. Meanwhile, preheat the oven to 160 degree Celsius.

Step 6 Make the dough

For the dough of the tart, in a bowl, add wheat flour along with powdered sugar and a pinch of baking powder. Mix the dry ingredients. Now, add the chilled butter to it and mix everything with the tip of your fingers

Step 7 Add remaining milk

Now, add the remaining milk in the flour-butter mix to knead it into a dough. Knead the dough gently with the tip of your fingers.

Step 8 Cover the dough

Cover the dough with a plastic wrap and refrigerate it for 10 minutes. After 10 minutes, roll the dough to 3 inches of thickness on a flour dusted surface. Cut it into round shapes using a cookie cutter.

Step 9 Make Tart shells

Line the tart tins with the cut our round dough and trim the edges with a knife. Poke the bottom of the tart with a fork.

Step 10 Bake the Tarts

Using peanuts as weights, place them on the tarts and transfer the tarts to the oven. Bake the tarts in a preheated oven for 10 minutes. Once done, remove the peanuts and bake the tarts again for another 15 minutes until they are golden in color. Once baked, take them out from the oven and let them cool.

Step 11 Serve chilled

Now, take out the kheer from the fridge and add it to the tart shells. Sprinkle some almonds, pistachios, rose petals and pomegranate seeds on top of it. Serve it chilled.
