This halwa is neither made with atta nor sooji. Rather, it is prepared using broken wheat, also known as dalia. Some other ingredients used to make Rajasthani Lapsi are desi ghee, jaggery, coconut, cashews and green cardamom.
The key to this lapsi lies in roasting the broken wheat very well. Roast it in hot desi ghee for at least 10 minutes, until it turns aromatic and changes its colour to light brown.
You can use sugar to sweeten it up, but adding jaggery complements the flavour of the broken wheat and gives lapsi its signature taste.
To make the halwa richer, you can also add almonds and raisins. Be it summers, winter or monsoon, there is no specific time to enjoy this dessert as it can be prepared round the year.

150 gm broken wheat (dalia)
200 gm jaggery
1/4 cup chopped coconut
2 tablespoon chopped cashews
2 piece green cardamom
4 tablespoon ghee

HOW TO MAKE RAJASTHANI LAPSI
Step 1 / 4 Roast The Broken Wheat
Heat ghee in a kadhai. Now add crushed cardamom along with broken wheat and mix well. Roast it for about 8-10 minutes or until it turns light brown in colour.
Step 2 / 4 Cook The Broken Wheat
Now add about 3 cups of water and cover with a lid. Let it cook for 8-10 minutes.
Step 3 / 4 Add Jaggery, Coconut And Cashews
Now add finely chopped jaggery, coconut pieces and cashew pieces. Give a mix, again cover with a lid and cook for the last 5-6 minutes. Once the jaggery has melted completely and the mixture has turned thick, lapsi is now ready.
Step 4 / 4 Ready To Be Served
Rajasthani Lapsi is now ready to be served. Serve it hot and enjoy.
