To prepare this delicious barfi you just need a handful of ingredients like pineapple, coconut, custard powder, sugar and ghee.

The texture of Pineapple Barfi is somewhat similar to Karachi Halwa. We have kept the recipe simple, however, you can add chopped nuts of your choice to elevate the taste.

Pineapple gives the barfi a light yellow colour but if you want the colour to be deeper, you can add some food colouring while making it.

INGREDIENTS OF PINEAPPLE BARFI

10 Servings

1 cup chopped into cubes pineapple

1 cup sugar

1/2 cup chopped coconut

1/2 cup custard powder

2 tablespoon ghee

HOW TO MAKE PINEAPPLE BARFI

Step 1 / 6 Mix Sugar And Water

Add 1 cup sugar to a pan along with one and a half cups of water. Once the sugar melts completely and the mixture warms up a bit, switch off the flame. Remember, you don't have to make a sugar syrup here, just dissolve sugar in water.

Step 2 / 6 Grind Pineapple And Coconut

Add diced coconut and pineapple cubes to a blender. Now blend well to form a mixture. Once done, strain the mixture to get juice of pineapple and coconut. Discard the strained pulp.

Step 3 / 6 Mix Custard Powder

Now custard powder and mix it well with the pineapple-coconut juice. Once mixed well, add this mixture to the warm sugar mixture. Give a mix and put it on medium flame.

Step 4 / 6 Cook The Mixture

Keep stirring until the mixture thickens. Make sure you keep stirring it. Add 2 tbsp ghee and again keep mixing well. Once the mixture thickens and leaves the sides of the pan, it is ready.

Step 5 / 6 Let It Set

Transfer it to a mould lined with butter paper or greased well with ghee. Let it set for 1 hour and then keep in the refrigerator for 1 hour.

Step 6 / 6 Cut Into Barfis And Serve

Chop into square shaped barfis and enjoy.
