Mango Rice recipe belongs to southern India and is a dish made of fresh basmati rice and sliced mangoes to give you a palate full of flavours.
Commonly known as 'Mavinakayi Chitranna' in the south, the mango slices used in this rice recipe gives it a sweet taste and every bite you take is filled with juices.

This main dish recipe is best suited for summers as mangoes are available in abundance in this season.
One can also garnish this recipe in the end with coriander leaves and nuts for more flavours.

1/2 kilograms basmati rice
100 gm ripe mangoes
3 green cardamom
1/4 cup ghee
1/4 cup sugar
2 teaspoon khoya
For Garnishing
11 leaves coriander leaves
cashews as required
Step 1 / 3 Saute The Khoya
Cook basmati rice in a rice cooker over medium flame. Meanwhile, place a medium-sized pan on the gas stove and saute the grated khoya to a golden colour. Don't use ghee to fry khoya because khoya itself releases ghee. Turn off the flame and transfer it to a small bowl. Once done, transfer in a bowl and keep aside.
Step 2 / 3 Arrange Everything
Now, peel the mangoes and slice them into pieces on a plate. Check for the rice now. If it's cooked, then add a layer of this cooked rice in a large serving bowl and top it up with sliced mangoes along with sauteed khoya. Repeat the same with the rest of the rice.
Step 3 / 3 Ready To Be Served
Now, place a pan over medium flame and add crushed green cardamoms and sugar in it along with cashews. Add 4 tbsp water and let the sugar dissolve. Add this mixture over the cooked rice and mango layers. Your Mango Rice is now ready to be served, enjoy!
