Deliciously flavorful, plus super easy to make. It is nothing but Indian style rice pilaf. Vegetable Pulao (Veg Pulav) is a spicy rice dish prepared by cooking rice with various vegetables and spices.

Always use good quality Basmati rice. Because basmati rice has long grains and is very fragrant once cooked. Aged basmati rice gives very good results.

Ingredients:

• 1 cup boiled mixed vegetables (french beans and carrot) cubes

• 1/4 cup boiled green peas

• 3 cups cooked rice

• 2 tbsp ghee

• salt to taste

• 1/2 cup deep-fried onions

To Be Ground Into A Smooth Paste (using 1/2 Cup Of Water)

• 7 garlic (lehsun) cloves

• 7 whole dry kashmiri red chillies , broken into pieces

• 25 mm (1") piece of ginger (adrak)

• 1 tbsp coriander (dhania) seeds

• 1 tsp cumin seeds (jeera)

For The Garnish

• 1/2 cup deep-fried onions

• 2 tbsp finely chopped coriander (dhania)

Directions:

1. Wash rice under running cold water till water runs clear. Or rinse the rice 2-3 times or till the water is not cloudy anymore. Then soak in enough water for 20 minutes.

2. After 20 minutes, drain the water.

3. Let's get started on the prep work while the rice is soaking. Chop all of the vegetables and keep them aside.

4. In a deep nonstick pan, melt the ghee, then add the prepared paste and cook for 1 to 2 minutes on medium flame, stirring occasionally.

5. Mix in the mixed veggies, green peas, salt, and 2 tbsp water, mix well for 1 to 2 minutes over medium heat, stirring periodically.

6. Add the rice and deep-fried onions, mix well and cook on medium flame for 2 minutes, while stirring occasionally.

7. Serve hot garnished with deep-fried onions and coriander.
