It is combined with mint, chilies, coriander and cumin seeds, giving you a burst of flavors in the very first bite you take.

1 cup sago

1 boiled,peeled potato

1 small chopped green chilli

1 teaspoon ginger paste

1 tablespoon chopped coriander leaves

2 tablespoon buckwheat (kuttu)

refined oil as required

2 cup beaten yoghurt (curd)

1 teaspoon mint

2 teaspoon roasted cumin seeds

sendha namak as required

In order to make bhalla/vada, soak sago for at least 2 to 3 hours. Drain the water and set aside.

Add soaked sago, boiled potato, green chilies, coriander, sendha namak, buckwheat flour and ginger paste in a bowl. Mix until well blended. Heat oil in deep frying pan over moderate flame.

Step 3 / 4

Take a small ball of sago mixture in your hand and flatten them to make a cutlet/tikki. Using your finger, make an impression in the tikki.

It will now look like a vada/bhalla. Once the oil is sufficiently hot, carefully lift the vada/bhalla and fry in hot oil until crispy and brown. Drain excess oil and set aside.

Now, with the help of a whisk, beat curd and add sendha namak to it. Dip vadas/bhallas in curd or pour the curd on them and garnish with mint leaves, coriander and fried green chilies.
