INGREDIENTS OF JACKFRUIT TACOS
1 1/2 cup jackfruit
3 tablespoon canola oil/ rapeseed oil
1/2 medium yellow bell pepper
1 tablespoon jalapeno
2 teaspoon garlic
1 teaspoon cumin
1/2 teaspoon coriander powder
1/4 teaspoon paprika
1/4 cup orange juice
1/4 cup vegetable broth
1 tablespoon adobo sauce
6 corn tortilla
2 tablespoon diced mango
2 tablespoon cabbage
HOW TO MAKE JACKFRUIT TACOS
Step 1 / 3
Start by heating 1 tablespoon of oil in a pan over low flame. Once the oil is hot, add the chopped onion, chopped yellow bell peppers, chopped jalapeno, and minced garlic to it.
Cook for a couple of minutes and add rinsed and chopped jackfruit in it. Stir it continuously till it gets softened.
Now, add cumin, coriander powder and smoked paprika to it. Cook it until the mixture turns aromatic.

Now, pour the orange juice, vegetable stock along with the adobo sauce in the pan and cook for some time. Keep stirring continuously and make sure the entire liquid evaporates.
Transfer this mixture to a large bowl, and keep aside for a while.
Now, place a non-stick pan over medium flame and heat 2 tablespoon of oil in it. Add half of the prepared jackfruit mixture in this pan and spread it evenly.

Now, on a flat surface, place the tortillas and add spoonful of this jack fruit mixture on each of these. Top it up with diced mangoes and chopped cabbage and serve with lime wedges to enjoy!
