INGREDIENTS OF GHIYA KHEER

4 Servings

1/2 kilograms bottle gourd

1 litre milk

2 teaspoon ghee

2 green cardamom

2 tablespoon cashews

2 tablespoon almonds

2 tablespoon raisins

1/2 cup sugar

HOW TO MAKE GHIYA KHEER

Step 1 / 5 Boil The Milk

Pour milk into a pot and keep on medium-high heat. Once a boil comes, switch the heat to low.

Step 2 / 5 Roast The Bottle Gourd

Firstly, peel the bottle gourd and grate it. Squeeze out all the excess water from the ghiya and collect it in a bowl. Now heat ghee in a pan and add the grated ghiya to the pan. Roast for about 5-6 minutes.

Step 3 / 5 Cook The Kheer

Add the roasted ghiya to the boiling milk along with sugar and crushed cardamom. Give a mix. Also, add finely sliced almonds and cashews along with raisins. Keep the heat low-medium and stir after every two minutes. Cook until the kheer thickens a bit. It might take anywhere between 10-15 minutes. Don't let the kheer thicken much, as it will thicken further after getting chilled. Switch off the heat immediately after it thickens slightly.

Step 4 / 5 Let The Kheer Cool Down

Once the kheer thickens a bit, switch off the heat and let it cool down, Now keep the kheer in the fridge for 1-2 hours or until chilled.
