Manchow soup is a popular soup recipe from indian chinese cuisine on cold winter days, serve this hot and spicy vegetable soup as an appetiser or with a main dish like hakka noodles or fried rice. 

INGREDIENTS

For Crispy Noodles

• 100 gms Hakka Noodles, boiled

• 1 tablespoon Cornflour (cornstarch)

• Oil, for deep frying

For soup

• 1/2 tablespoon Oil

• 2 tablespoons Cornflour (corn starch)

• 1/2 tablespoon finely chopped Garlic, ginger

• 1/4 cup finely chopped Carrot, Onion, Green Beans, Capsicum, Tomato and Cabbage

• 2 cups Vegetable Stock or Water

• 1/2 teaspoon Vinegar

• Salt to taste

• ¼ teaspoon Black Pepper Powder

• 1 tablespoon Soy Sauce

• 2 tablespoons finely chopped Coriander Leaves(optional)

• 2 teaspoons Chilli Sauce

• 1-2 tablespoons finely chopped Green Onion, optional

How to make

1. Sprinkle 1 tablespoon cornflour (cornstarch) over boiled noodles Toss them well to evenly coat each noodle with flour. In a heated pan, deep fried the noodles until they are crispy.

2. Mix 2 tablespoons cornflour(cornstarch) with 1/4 cup water and keep aside. Make sure that there aren't any lumps.

3. In a deep kadai, heat 1/2 tablespoons oil over medium flame. add 1 finely chopped onion, 1/2 tablespoon finely chopped garlic, 1/2 tablespoon finely chopped ginger and Sauté for 1-2 minutes, or until onion is transparent.

4. Add 1/4 cup finely chopped carrot, green beans, capsicum, tomato and cabbage.

5. Sauté for about 2 minutes, or until all vegetables are cooked but still crunchy.

6. Mix in 2 tablespoons coriander leaves, finely chopped.

7. Now add 2 cups water and 2 tablespoons chili sauce and 1/2 tablespoons vinegar.

8. Add 1 tablespoon soy sauce.

9. Mix thoroughly and simmer the soup over medium flame.

10. When the soup begins to boil, add in the cornflour-water and mix well. To avoid the formation of lumps, stir continually for a minute.

11. Add a pinch of black pepper powder and salt to taste.

12. Add 1-2 tablespoons finely chopped green onion

13. Allow the soup to thicken for a few minutes. It will take 3-5 minutes to complete. Turn off the flame. The Manchow Soup is ready to serve. Garnish it with green onions and fried noodles on top.
