INGREDIENTS OF CRISPY SABUDANA VADA

1 cup sago
2 mashed,boiled potato
1/2 cup crushed peanuts
2 pinches spice chili powder
3 pinches sendha namak
1/2 tablespoon lemon juice
1/4 tablespoon sugar
2 tablespoon ghee
1/2 tablespoon cumin seeds
2 raisins
HOW TO MAKE CRISPY SABUDANA VADA
Step 1 / 4 Soak The Sago And Drain The Excess Water
To prepare this Navratri recipe, take a bowl and add sago and water to it. Soak for at least 2 hrs or till it gets fluffy. Once it's done, drain the excess water and transfer the sago in a bowl. Keep it aside for 2-3 hours.
Step 2 / 4 Roast The Groundnuts
Take another bowl and add 2 boiled potatoes to it. Peel and mash them well using your hands. Meanwhile, Roast 1/2 cup of groundnuts in a pan over medium flame. Once done, transfer the nuts to a bowl keep them aside. Now add 1 tsp oil in the same pan and heat it over moderate flame. Add cumin and raisin to it. Saute for a few seconds and then turn off the flame.
Step 3 / 4 Mix All The Ingredients Together
Mix the sago, boiled potatoes and crushed groundnuts together in a bowl. Add salt, lemon juice and sugar to the mixture. Pour the cumin-raisin mixture into this bowl and mix well.
Step 4 / 4 Cook The Vada And Serve Hot!
Take portions from the mixture and form vadas with oiled palms. Heat an appam pan over a low flame. Place these vadas in the compartments of the pan and allow them to cook for 10 minutes on slow heat. Turn and cook to give it a nice golden-brown colour. Serve the sabudana vada hot with coriander or mint chutney.
