This is an interesting yet healthy snacking option which does not require much time and can be made in just 10 minutes. 

This easy recipe is favourite with my friends who go on fasting and also for diet conscious people.

For those who are fasting must this snack recipe will save your popcorn budget for something else.

INGREDIENTS OF CARAMELIZED LOTUS SEEDS

1 Serving

1 cup lotus seed

1 tablespoon jaggery

1 teaspoon ghee

1/2 teaspoon black sesame seeds

1/4 teaspoon sea salt

1/2 teaspoon sesame seeds

HOW TO MAKE CARAMELIZED LOTUS SEEDS

Step 1 / 4

To prepare this delicious snack recipe, put a frying pan over low to medium flame and add lotus seeds in it. Roast makhana in it for 7-8 minutes. Make sure you stir continuously so that they are crunchy. (Note: You may need to adjust the flame plus minus 2 minutes for perfect crunch while also keeping the colour of makhanas intact to off white.

Keep the crunchy roasted makhanas aside for 2 minutes to cool a bit and meanwhile, prepare jaggery syrup by melting jaggery with ghee in another pan over low flame.

Step 3 / 4

Once the syrup is ready, mix together hot jaggery syrup into the roasted makhanas very well so that liquid jaggery coats each and every lotus seeds properly.

Step 4 / 4

Immediately, sprinkle black and white sesame seeds along with sea salt (which is optional) into the bowl of caramelized makhanas. Black and white sesame seeds to up the health quotient of this snack further and sea salt will give a contrasting yet complimenting flavour to balance the sweetness of jaggery and your munching snack is ready! Store this in an air-tight jar to retain the crunch and its shelf life so that they can be consumed for 2-3 days post preparation.
