INGREDIENTS OF BUTTERSCOTCH ICE CREAM

1 teaspoon butterscotch essence
1 3/4 cup heavy cream
300 ml condensed milk
2 3/4 tablespoon milk powder
1 drop edible food color
1/4 cup chopped unsalted cashews
1/4 cup chopped unsalted almonds
1/2 cup granulated sugar
HOW TO MAKE BUTTERSCOTCH ICE CREAM
Step 1 / 5 Prepare The Praline
In a pan, add sugar and let it melt completely. Once it starts to caramelize, add chopped almonds and cashews. Stir well to combine the nuts and then switch off the gas flame. You have to do this process a bit fast so that the sugar doesn't burn after getting caramelized. Grease a parchment paper and transfer the nut mixture to it. Let it cool down.
Step 2 / 5 Grind The Nut Mixture
Once the sugar-nut mixture has solidified, break it into a few pieces. Add those pieces in a grinder and convert it into a powdered form. Let the powder have some corase pieces for that extra crunch. Keep the praline aisde for now.
Step 3 / 5 Beat The Heavy Cream
In a bowl, add chilled heavy cream and beat it until stiff peak forms. Keep it aside. Take another bowl, add butterscotch essence, sweetened condensed milk, and milk powder. Mix everything and then add yellow food color. Mix it again. Now, slowly pour the whipped cream (in parts) to the condensed milk mixture. Mix it gently.
Step 4 / 5 Add Praline To The Prepared Cream Base
Once you have mixed the condnsed milk mixture and whipped cream, add praline to it. Using a spatual, combine eveything well. Transfer the ice cream to a container and let it freeze for atleast 5 hours.
Step 5 / 5 Your Butterscotch Ice Cream Is Ready To Serve.
After 5 hours, take out the container. You can sprinkle some praline if you want. Your Butterscotch Ice Cream is ready to serve. Enjoy.
