Pasta is so versatile that it can be enjoyed during any meal of the day. Along with being delicious, Broccoli Pasta is also rich in nutrients and add into the health quotient of a meal preparation.
This easy-to-make dish is perfect for kitty parties and potlucks, given that it can be prepared in just half an hour. As the name suggests, this pasta takes forth the goodness of broccoli and makes it tasty with such ingredients as Parmesan cheese, red pepper, olive oil, and chilli flakes.
With its cheese factor, this Italian dish is a pure delight.
Ingredients of Broccoli Pasta

250 gm pasta spaghetti
1/2 cup parmesan cheese
1 teaspoon kosher salt
50 ml extra virgin olive oil
1/4 teaspoon red pepper
water as required
1/2 broccoli
4 cloves garlic
1/2 teaspoon lemon juice
1/2 teaspoon chilli flakes
1 cup chilled water
How to make Broccoli Pasta
Step 1 Cut broccoli into small florets
First, wash broccoli and cut a part of it into small florets. Slice the rest of it into long strips. Then, peel and mince garlic cloves in a small bowl.
Step 2 Boil the broccoli florets and then blanch them
Now, add water in a deep-bottomed pan and place it over medium flame. Give it a boil and then add broccoli florets in it with kosher salt. Let it cook till al dente. It would take around 2-5 minutes. Turn off the flame, take out the cooked florets, and put them in chilled water. After 2 minutes, take them out and pat dry.
Step 3 Boil spaghetti in broccoli water
Put that water on medium flame again and add spaghetti in it. Let it cook for 5-10 minutes. Note, that you do not need more salt in the water since it was put when cooking the broccoli. Also, do not overcook pasta. It should be al dente.
Step 4 Saute broccoli stems and cook broccoli florets in it
Next, put a skillet on low flame and heat oil in it. When the oil is hot enough, add broccoli stems in it and saute for a minute. Then, add minced garlic along with red pepper and chilli flakes. Increase the heat to medium flame and add kosher salt. Mix well and cook for 5-6 minutes. Post that, add the florets and boiled pasta in the skillet and cook for 2-3 minutes.
Step 5 Finally mix spaghetti and cook for 2 minutes
Using a colander, drain the extra water in the pasta and add it to the skillet mixture. Toss well all the ingredients and let the dish cook for another 2 minutes. Add more salt and chilli flakes, if needed. Finally, add grated parmesan cheese over the pasta. Toss well and transfer to a serving plate. Pour some lemon juice over it and serve immediately with the garnishing of grated cheese.
