INGREDIENTS OF ANJEER CHAAT

3 Servings

1/2 tablespoon figs

1 cup boiled potato

1/4 cup corn flour

refined oil as required

salt as required

1 cup yoghurt (curd)

2 teaspoon green chutney

2 teaspoon tamrind chutney

2 papad

1/4 teaspoon red chilli powder

1/4 teaspoon chaat masala powder

1 tablespoon boiled chickpeas

For Garnishing

1 handful coriander leaves

HOW TO MAKE ANJEER CHAAT

Step 1 / 4 Mash The Boiled Potatoes And Whisk The Curd

Peel the boiled potatoes and mash them well. After peeling them, finely chop coriander leaves and with the help of an electric beater, whisk the curd and beat it well.

Step 2 / 4 Make Potato Tikkis With Stuffed Figs Inside Them, Deep Fry Them

Now, take a bowl and add mashed potatoes along with salt, and mix well. Stuff with one tablespoon of anjeer and shape into a tikki, and roll it over the corn flour. Now heat oil in a kadhai over medium flame and when the oil is hot enough, deep fry the tikkis until golden and crisp.

Step 3 / 4 Prepare The Chaat By Pouring Chutnies & Beaten Curd Over Fried Tikkis

Transfer into a bowl after taking out excessive oil on a kitchen towel. Place the tikki in a plate, top with beaten curd, green chutney, tamarind chutney and boiled chickpeas.

Step 4 / 4 Garnish With Papad And Coriander Chaat, And Enjoy

Toss the papad or the pappadum in the masala mix and garnish on top of the chaat. Top up with finely chopped coriander leaves and relish the yummy flavours.
