It's a simple, easy, and delicious pasta covered in a creamy spinach sauce everyone will love. It takes less than 15 minutes to prepare and makes a wonderful weeknight meal for the whole family. This is one of those quick pasta dishes or one-pot pasta recipes that is perfect for when you need to have dinner on the table quickly. You'll adore this fast spinach sauce full of nutrient-dense leafy greens. A favorite for both kids and adults and an excellent option for gatherings or kids lunch box.

INGREDIENTS:

• Pasta

• Baby spinach

• cheese

• Olive oil

• Garlic

• Salt & pepper

How to make it:

1. Start a pot of water for the pasta and cook it until it's just undercooked.

2. In a large frying pan over medium-high heat, heat some olive oil. Add the garlic and cook for a few minutes.

3. Add the spinach to the pan

4. Sauté with the garlic. Once wilted, season with salt and pepper. Remove from heat and set aside.

5. Before draining the pasta, reserve a cup of the pasta water.

6. Drain and set aside the pasta.

7. Add the spinach and garlic mixture to a food processor ( or blender).

8. Add the cheese and half of the reserved pasta water.

9. Puree until it forms a sauce (adding more pasta water if needed).

10. Add back the sauce into the pan

11. Add the pasta that has been partially cooked.

12. Stir to combine and heat through, adding more pasta water if needed.

13. Taste and season with more salt and pepper if necessary once the spaghetti is cooked through. Serve with more grated cheese on top.
