The Hariyali Pav Bhaji is a leafy vegetable-based version of the traditional pav bhaji. It's incredibly simple to cook, and it's also very nutritious. Pav bhaji is a type of snack that may be enjoyed at any time of day. It doesn't matter if it's brunch, lunch, or dinner. Such a versatile snack dish must be adored by a real foodie.
INGREDIENTS
1. Tomatoes 250 gms
2. Potatoes 250 gms, cubed
3. 100 Gms green peas
4. 50 Gms cauliflower
5. 1 bunch of spinach
6. Salt to taste
7. Pav bhaji masala 2 tsp
8. Onions 2, chopped
9. Lemon juice 2 tsp
10. Butter 2 tbsp
11. Green chili and garlic paste 2 tbsp
12. 1 Finely chopped capsicum
13. 1 Tsp dry coriander powder
Instructions
1. Add cauliflower florets, potatoes and green peas in pressure. cook until tender
2. heat butter in a pan
3. Add green chili and garlic paste. saute until raw aroma goes away
4. Add onions and capsicum. saute until translucent
5. Mash boiled potatoes
6. Add spinach to boiling water for 3-4 minutes
7. Drain excess water
8. Add cold water to spinach
9. Grind spinach to smooth puree
10. Add chopped tomatoes and saute for a minute
11. Add salt and mix thoroughly
12. Cover and cook till tomatoes becomes soft
13. Mash tomatoes well
14. Add pav bhaji masala and mix
15. Add mashed potatoes
16. Add stock of boiled potatoes and mix
17. Add spinach puree and mix well
18. Add 1 tsp of butter
19. Add lemon juice and mix
20. Transfer to serving bowl
21. Serve with pav and chopped onions
