In simple terms, rabdi or rabri is a classic North Indian treat that's rich, creamy, and perfectly sweet. It's commonly produced with whole milk that's been boiled for a long time over low heat until it's reduced to a 1/3 or a 1/4 of its original volume. Ingredients

• 6 Cups milk, full cream

• 1/2 cup sugar

• 4-5 green cardamoms

• 12-15 almonds (shredded), blanched

• 2 tbsp pistachios (shredded), blanched

• 10 cashews (chopped)

• 2 tbsp saffron milk

How to Make

1. To begin, heat milk on a big nonstick pan.

2. Stir occasionally and bring to a boil.

3. Reduce the flame to medium as well. Stick the cream to the sides of the vessel once it has created a layer over the milk.

4. furthermore, bring the milk back to a boil and repeat the cream collection on the kadai's sides.

5. Repeat the process at least 5 times more, or until the milk is reduced to one-third of its original volume.

6. Also add sugar, cardamom powder and saffron milk.

7. Give it a good mix and re-boil the milk.

8. Scrape the collected cream from the sides as well. and give it a good mix

9. Transfer in a bowl and set aside to cool.

10. Serve with chopped dry fruits as a garnish.

11. Finally, serve chilled or hot rabdi / rabri.
