Baingan bharta, a smokey and flavorful Indian curry cooked with fire-roasted brinjal and spices. In each bite, it is known for the mix of spice heat with a smoky or charcoaly taste. The recipe is perfect as a side dish with Indian flatbreads like roti and chapati, but it may also be served as a simple dal rice dish. The Hindi word Baingan means eggplant (or aubergine or brinjal) in English and Bharta means mashed.
INGREDIENTS
for roasting:
• 400 grams brinjal / baingan / eggplant
• 3 clove garlic
• 1 chilli
• 1 tsp oil
other ingredients:
• 2 tbsp oil
• 1 tsp cumin / jeera
• 1 dried red chilli (broken)
• 1 inch ginger (finely chopped)
• 2 clove garlic (finely chopped)
• 1 onion (finely chopped)
• ½ tsp kashmiri red chilli powder
• 1 tsp coriander powder
• 1 tomato (finely chopped)
• 1 tsp salt
• ½ tsp garam masala
• 2 tbsp coriander (finely chopped)
How to make
1. To begin, cut four slits in a big brinjal.
2. In each slit, stuff 3 garlic cloves and one chilli.
3. Grease the baingan with oil to make it easier to peel of the skin after roasting.
4. Start roasting on a gas stove, flipping occasionally.
5. Roast until the brinjal is dark and completely cooked on the inside.
6. Allow the baingan to cool completely before peeling the skin off.
7. Remove the brinjal's head and check to see if the brinjal is totally cooked on the interior.
8. With the help of a fork, mash the eggplant. Set aside for now.
9. In a large kadai heat 2 tbsp oil and saute 1 tsp cumin, 1 dried red chilli, 1 inch ginger and 2 clove garlic.
10. saute 1 onion until it shrinks slightly.
11. Add 1/2 tsp chilli powder and 1 tsp coriander powder and continue to cook until the spices are aromatic.
12. add in 1 tomato and saute until it turns soft and mushy.
13. Add in the roasted and mashed brinjal, as well as 1 teaspoon of salt.
14. Mix and mash for 5 minutes, or until all of the flavours are well combined.
15. add ½ tsp garam masala and 2 tbsp coriander. mix well.
16. finally, serve baingan ka bartha with hot phulka or rice.
