• 2 corn tortilla
  • 425 gm bean
  • 2 tablespoon frozen red peppers
  • 4 tablespoon frozen sweet corn
  • 2 tablespoon sour cream
  • 3 pinches salt
  • 1 tablespoon cheese cheddar
  • 4 teaspoon piri piri seasoning
  • 6 teaspoon piri piri seasoning
  • 2 tablespoon frozen yellow pepper
  • 4 tablespoon salsa sauce
  • 50 gm avocados
  • 1 tablespoon Monterey jack cheese
  • 20 gm jalapeno


  • Heat the re – fried beans over medium flame and add in piri piri seasoning to help give the beans some spice.
  • While the beans are cooking, heat the bell peppers and corn in a large skillet over medium flame.
  • Add the remaining piri piri seasoning to the bell pepper/corn mixture
  • Let everything simmer together for about 10 minutes until the piri piri seasoning and the water from the cooked veggies make a rich sauce.
  • Heat the corn tortillas in a microwave or on a skillet.
  • On the other hand, make guacamole sauce by blending together avocado and salt together and keep aside till required, to prepare the Mexican cheese blend, mix together all the cheese with jalapeno and blend it well
  • Now assemble the fajitas, Spread a 2 tablespoon of black on one corn tortilla, top it up with the bell pepper and corn mixture, sales and 1 tbsp each of cheese , guacamole and Greek yoghurt.
