Anda Paratha, also known as Egg Paratha is one classic fusion recipe that you would find on the streets. If you're bored of having Aloo or Paneer Paratha, then this protein-rich Anda Paratha is going to be a life-saver for you. The paratha is half cooked initially and then further gets cooked when you place it on the omelet.

Make sure the omelet gets well stuck on the paratha. Anda Paratha has to be crispy from the outside and soft from the inside. 

Ingredients of Anda Paratha:

1 cup wheat flour

2 egg

1 large chopped green chilli

1 teaspoon red chilli powder

black pepper as required

1 tablespoon chopped coriander leaves

water as required

2 teaspoon vegetable oil

1 small chopped onion

1 1/2 tablespoon chopped tomato

salt as required

Pinch turmeric

1/2 tablespoon ghee

Step 1 Knead the dough

Knead wheat flour with the help of warm water and oil into a dough. Keep it aside for 20 mins.

Step 2 Beat the eggs

In a bowl, add eggs, chopped veggies, salt, pepper, red chili powder, and turmeric. Whisk the mixture properly.

Step 3 Cook the paratha

Extract dough balls, using a rolling pin flatten them like a roti. Next, heat ghee on a pan, and then add paratha. Half cook the paratha from both the side and then transfer it to a plate. Open the top layer of the paratha and keep the sides intact.

Step 4 Put paratha on the omlette

Now, pour the egg mixture into the pan. Once the egg gets half cooked, place the paratha on top of it. Press it gently so that the omelet sticks to the paratha. Cook it from another side as well. Check if the omelet has been cooked properly and the paratha has brown spots.

Step 5 Your Anda Paratha is ready

Your Anda Paratha is ready. Serve it hot with green chutney or tomato sauce.
